Craft distilling is still a young story in Thailand, and this is one of the best places to see it up close. Under an hour south of Chiang Mai, a small working distillery turns Thai-grown produce into internationally award-winning spirits made without added flavourings, colourings or sweeteners.
The visit begins outdoors in the distillery’s own fields, with a welcome drink and an introduction to the ingredients: sugarcane, cassava, coconut flower nectar and tropical fruit, grown without synthetic pesticides or fertilisers. Your host will explain why that matters more in a spirit than you might expect, and why sugarcane rum has a stronger connection to this part of the world than most people realise.
From there, step into the production areas. See how yeast, temperature and time shape flavour during fermentation, then watch the copper pot stills at work as the distillers explain how they select only the best part of each run. The spirits then rest for months in stainless steel tanks before bottling, giving the flavours time to settle.
The visit ends with a guided tasting of gin, rum and vodka, each introduced with the story of its ingredients and method. Small cocktail serves between flights show how the spirits change when mixed. There’s time afterwards for questions, the opportunity to revisit your favourites and a quick browse of the bottles and other products to take home.
Please note
The experience lasts around two hours. Guests must be 20 or over to take part in alcohol tastings; non-alcoholic options can be arranged on request, including for pregnant guests. Closed, comfortable shoes are recommended (no high heels) and shoe covers are provided for production areas. Wheelchair access can be arranged in advance, though some outdoor areas are not accessible. Tours run in English and Thai, with other languages on request.
